Cauliflower-Potato Casserole
1 cauliflower, cut into small florets
4 large-ish red potatoes, sliced
1 green pepper, diced
1 bunch green onions, diced
1/2 lb (~225g) parmesan, grated
4 eggs
2 cups buttermilk
1/2 lb (~225g) ham, chopped (optional)
Salt and pepper to taste
Preheat oven to 350° F/180° C/Gas Mark 4.
Mix vegetables, potatoes, and ham together in a large casserole dish.
Lightly beat eggs, stir in cheese, buttermilk and salt and peper to taste, and pour mixture evenly over casserole.
Bake in oven for 1 to 1 1/2 hours until custard has set and top of the casserole is starting to brown.
